In Lebanon, coffee or Kahwa as it is known in Arabic, is the great social unifier. The Lebanese serve one of the world’s strongest and most flavorful. Some people say it’s unique because of the pure Lebanese water, others say it’s the Cardamom that’s often added and some say it’s all down to whose making the coffee. At 961 Beer, we think beer is the great unifier. So to make our Imperial Stout, we’ve taken all three elements: pure Lebanese water & hand picked Coffee and Cardamom, and given them to our brew master. The result is a beautiful, inky black stout big on the coffee and cardamom flavors just like Lebanese Kahwa .

Pasteur Street IPA is an American ‘West Coast’ style IPA. It has a light golden color and a bready malt flavor but this beer is all about the hops. We use excessive amounts of American hops which give this beer its distinct aroma of citrus, pine, and tropical fruits. This hop aroma is complemented by a clean, bitter finish and medium body.
An award-winning brew using a strain of yeast that has a very spicy aroma. When we brew this beer we also add Phu Quoc black pepper, ginger, and lemongrass to complement the naturally phenolic aroma created by the yeast. While most beers are brewed using malted barley, this beer is brewed with malted wheat as well; this lends a light wheat flavor that pairs well with the dry finish.
The realm of IIPAs, balance, surprisingly, is still a defining factor. Instead of delicacy in balance, it’s now big flavour in balance. Simplistically, to achieve a big flavourful IIPA you need: Big Malt + Big Hops + Big Fermentation. It’s a bit of complicated symbiosis between these three requirements and each of these three provide multiple elements. The malt provides the complex spectrum of sugars for fermentation as well as the main structure and body of the beer. The hops contribute bitterness to balance the malt sweetness as well as resinous piney flavours and juicy fruity-citrusy aromas. The fermentation provides us with a big hit of fun juice (ethanol) and the vast array of incredibly important characterful aroma and flavour compounds.
